I tired it once and it turned out pretty good.

1/3 cup | powdered milk |
1½ Heaping Tablespoons | instant yeast |
3 tsp | salt |
1/3 cup | sugar |
3 Tablespoons | shortening |
3 cups | warm water |
~7½ cups | flour |
Mix powdered milk, yeast, salt, sugar and shortening in Kitchen Aid. Add warm water. Add about 2 to 2½ cups of flour and beat until well mixed. Add flour slowly until dough comes away clean from the edge of the mixing bowl. Allow to knead for 5 more minutes. Do not add too much flour because you want the dough to be moist so it raises in the oven.
Cover with greased plastic and allow dough to rise until doubled in size. This should be less than 1 hour. Next divide into 2 or 3 parts, depending on how large your bread pans are. Form into a log, tucking and pinching the dough underneath to make it smooth on the top. (This is easily done if you lightly roll out the dough and roll up length wise, pinching together seam and tucking in the ends.)
Place each into a greased loaf pan and raise until the size of the final bread loaf. This also should be an hour or less.
Preheat the oven to 350o or 340o if using convection. I read that you should insert a pizza stone on the rack below the loaf rack in the oven.
Before inserting into the oven, cut the top of the loaf of bread to allow expansion in the oven. Also you could add a pan of water to keep the humidity up in the oven and allow for the top of the bread loaf to expand.
Bake at 350o for 30 minutes or until golden brown.

Powdered milk & water can be substituted with 1½ cups of warm milk and 1½ cups of warm water.
I used convection oven with inside temp at exactly 340 and baked for exactly 30 minutes and it turned out great.
